The first course inspired by Angel Villoldo’s El Choclo, comprises a Sweet Corn Quiche with Tomato Confit and Cress Salad. The main performance, or the entrée, is Anibal Troilo y Homero Manzi’s Sur, and features Venison Loin with red and Black Quinoa Salad and Bell Pepper Cream.
